Lutefisk….the fish, the story, the legend.....

It’s been a Norwegian family tradition for generations – Lutefisk! Whether you love it or hate it, nearly everyone has an opinion about it ….. and usually several family stories and a few good jokes up their sleeve!

For the uninitiated among you – lutefisk is fish -cod to be exact. What makes it ‘lutefisk’ is the way it was processed in the Nordic countries before refrigeration was available. To preserve the cod, it is salted and dried in the pure, cold Nordic air. When it was ready to use, the lutefisk (literally translated: lye fish) is put through a series of treatments to make the fish edible. It is first soaked in a lye and water solution to revive the fish and then rinsed for days in clear, cold water to remove the effects of the lye.Only then is it ready to cook and make glad the hearts of Scandinavians everywhere!

Vær så god!
